Located in some back alley of Dalian, you’ll find this wonderfully hidden hot pot restaurant that specializes in paper thin sliced grouper fish in hot pot. It’s a crazed obsession that’s hit Dalian pretty hard where you won’t find in many other places apparently. There are several restaurants in the city that do this style of sliced fish, but my wife (Dalian bred) swears by this place, so off we went.

Once you’ve made your orders, they will bring you a giant pot of their fish broth, with fish bones cooking in the pot as well. Not very aromatic, but the flavor is undeniable. The accouterments include red pepper oil, ginger paste, and diced green onions. Be careful with the red pepper oil cause it packs quite a kick, even with a small spoonful.

The sliced grouper fish is so delicate and thin that it will cook in 3 seconds under the rumbling boil of the hot pot. The translucence of the fish makes it plate wonderfully and is aesthetically pleasing. The taste is very light as well and is enhanced with a good bath in the ginger sauce. Surprisingly more firm than the transparent flesh will let on.

We also ordered some mushrooms, cabbage, and lamb slices to accompany the mountainous plates of fish we had. The lamb was nice. Standard sliced lamb that isn’t nearly as gamey as ones I’ve had across the Pacific. The mushrooms and cabbage are standard and work nicely under the fish broth. The noodles were great. The wife likes waiting til the end to throw in the noodle so that you can have them soak up all the fishy flavor. Great decision.

The restaurant is very nice inside and the dining areas are divided into smoking and non-smoking halves. The non-smoking half is far less glamorous than the smoking half which speaks volumes about the culture of China. The location might be a bit sketchy, but that could also be a by-product of my upbringing in the Western world. Overall, I would highly recommend you check this place out if you ever find yourself in Dalian.
